Basic preparation
Our Wild Alaria is a raw food that can be enjoyed straight from the bag or added to recipes. It comes straight from the ocean without rinsing or processing and is sun dried at mild temperatures to retain nutrients and enzymes. Look for the occasional pebble or shell hidden in the leaves. The leaves may develop a fine white powder during storage. Nothing to worry about... these are just natural salts and sugars that can be rinsed off or left in for flavor.
Store alaria in this bag or other sealed container away from extreme light, heat and moisture.Alaria is best cooked, although the thin edges of the raw leaf are tender before the midrib.Wakame can be substituted, but requires 20 minutes cooking time.To shorten cooking time, remove the midrib or cook it separately.Or pressure cook the whole leaf for 5-6 minutes.Pre-accelerate for 1-12 hours.or pre-bake for 3 min.At 300° it shortens the usual cooking time by 5-10 minutes.
