For the bread: Preheat oven to 350ºF. Lightly spray or grease a 9 x 5-inch loaf pan. Empty mixture into a large bowl. Pour in the beer (or club soda) and olive oil and stir with a wooden spoon until moistened. Pour evenly into the prepared loaf. Bake for 45-50 minutes or until a tester comes out clean. Remove from the pan and let cool before slicing.
Varieties ...
In the beer and olive oil mixture, add 1/2 cup of olives (such as Kalamata, Spanish, or black).
In adding 1/4 cup of coarsely chopped tomatoes and olives while adding the beer and olive oil.
Brush top of loaf with 1 Tbsp. melted butter and sprinkle lightly with kosher salt or fresh, grated Parmesan cheese after baking.
