Makes 8 flatbreads.
You will need
Cake:
5 tablespoons (62 g) olive oil, divided
1 packet of yeast, including
1 1/4 cups (284 g) Water, hot (115ºF to 120ºF)
Topping:
3 tablespoons olive oil (37 g) or butter, melted (43 g)
1 packet of Za'atar Herb Blend, including
- Spread 2 tablespoons oil (25 g) on a rimmed baking sheet.
- Stir together flatbread mixture, yeast, hot water, and remaining 3 tablespoons (37 g) oil in a large bowl until combined. Oil your hands, then fold the sticky dough over itself in the bowl for 1 to 2 minutes, until smooth; dough will remain tacky.
- Scoop dough onto oiled pan. Divide into 8 pieces (about 95 g), shape into balls and roll in oil. Let rise for 30 minutes, uncovered.
- Heat a heavy, dry skillet or griddle over medium heat (350ºF to 375ºF).Place one piece of dough at a time into a 6 to 7” circle on the baking sheet.
- Cook For 11/2 to 2 minutes on each side, stack and wrap in a clean dish towel and repeat with remaining dough.To add a topping, brush flattened rolls with oil or melted butter and sprinkle with za'atar herb mixture before serving warm.
