Tips:
Mix together eggs, butter or oil, and milk. Beat in mixture. Allow batter to sit for 10 minutes to thicken.
Heat a lightly greased griddle or skillet over medium heat.
Pour batter, little by little 1/4 cup at a time, into skillet or griddle. Cook until bottom is lightly browned and edges look set; Flip and cook until full sides are lightly browned.
For waffles
For every 1 cup of dry mixture, mix together 2 large eggs, 2 tablespoons oil, and 1/2 cup milk. Cook according to Waffle Iron directions; full cooking may take an extra minute.

To make eggless or dairy-free: Substitute the egg and milk amounts called for your favorite egg and dairy-free milk substitute or water.
