1 tablespoon Bob's Red Mill Corn Strea = 2 tablespoons flour

Cornstarch has twice the thickening power of flour. When a recipe for a gravy, sauce, soup, or stew calls for flour, use half as much cornstarch to thicken. To thicken hot liquids, first stir the cornstarch into a little cold water until smooth. Gradually stir into the hot liquid until blended. Stirring constantly, bring to a boil and cook for one minute.
