Tips for Baking with Almond Flour
- Almond flour and plain almond flour do not stick together.
- For best baking results, batters and doughs should be on the thick side.
- Don't worry about overdoing the batter. Baked goods made with almond flour will not create a difficult consistency.
- Wrap your bakeware in foil if it starts to brown too quickly.
Double Chocolate Almond Cookies
- 1/2 cup butter
- 4 oz. Semi-sweet chocolate
- Packed brown sugar 1/4 cup
- 1/4 cup of sugar
- 1 1/2 teaspoon vanilla extract
- 2 eggs
- 1 1/2 Cups Blue Diamond ® Almond Flour
- Chocolate chips 2/3 cup
- 1/2 cup chopped almonds
Tips:
- Preheat oven to 350°F and lightly grease an 8-inch baking pan.
- Melt the butter and chocolate in a medium saucepan over very low heat.
- Stir in sugars and vanilla; set aside to cool.
- Add eggs and beat well to incorporate. Stir in almond flour and mix well. Then add chocolate chips and almonds.
- Spread evenly in prepared pan; Bake for 30 to 35 minutes or until a toothpick inserted into center comes out clean.
- Allow to cool completely before cutting into squares.
