What if we could sweeten our food and drinks without sucrose (table sugar) and without chemical sweeteners (like aspartame or sucralose)? What if there was a sugar that not only sweetened but also enhanced flavor? What if that sugar were actually good for us? We’re meeting trehalose (tre-AH-loze), a candidate product now available for home use for the first time since its discovery more than 175 years ago. Trehalose is sweet and energizing! This multifunctional sugar is made up of two glucose molecules and, when processed, releases both of them—twice as much glucose as other forms of stored sugar. That translates into a quick supply of energy. Trehalose is sometimes called “mushroom sugar” because it’s found in significant amounts in certain mushrooms. But the compound can also be found in fungi such as yeast, seeds, algae, and in "regeneration" plants—desert plants that can survive long periods of drought but come back to life when given water. As a sweetener, trehalose doesn't affect the body's natural flavor or cause rapid increases in blood glucose levels, as do sucrose and other sugars. The enzyme that digests trehalose is found mostly in the small intestine, meaning it isn't actually metabolized until 2 or 3 hours after ingestion. This slow process may also be key to the sustained energy that trehalose seems to provide.
