General cooking instructions: Wash and drain lentils. Place 1 cup lentils in a medium pot and add 3 cups water or broth. Cover with a lid and bring to a boil. Reduce heat and simmer until tender, about 20 minutes. If water level becomes too low and beans are not covered, add additional water.

1 cup of dry lentils yields 2-2 1/2 cups of cooked lentils.
