You will need:

• 1 egg (or egg substitute)
• 1/2 cup (1 stick) unsalted butter, at room temperature (or butter substitute)

Instructions:

1. Preheat oven to 325°F. Beat softened butter and egg in a large bowl. Add cookie mixture to bowl and mix until thoroughly combined.
2. Drop dough with the back of a rounded tablespoon onto the cookie sheet. Lightly flatten the top of the cookie with the back of the spoon.
3. Bake for 12-15 minutes or until edges are light brown. Cool on baking sheet for 2 minutes.

Store baked cookies in an airtight container for up to a week. The cookies can also be frozen for up to three months.
