Golden Cornbread

• 2 eggs
• 1/2 cup melted butter
• 1 glass of water
• 1 Packet Bob's Red Mill® Cornbread Baking Mix

Preheat oven to 350ºF. Butter or oil an 8-inch square baking dish.

Mix together eggs, melted butter, and water. Add cornbread mixture and mix until combined. Pour batter into prepared baking pan. Bake until a toothpick inserted into center of pan comes out clean, 35 to 40 minutes. Cool 15 minutes before serving.

Makes 12 servings.

Cupcakes

Preheat oven to 350ºF. Oil or line a 12-cup standard muffin pan.

Follow mix instructions above. Fill cups 3/4 full. Bake until a toothpick inserted into center muffin comes out clean, 18-22 minutes. Cool shortly before serving.
